Title: Cinnamon Cucumber Rings (Pickles)

Peel, core, and cut cucumbers (large) into rings. Let stand 24 hours, then drain and wash thoroughly. Then soak 3 hours in clear water.

Õ2 gals. cucumber rings 2 c. pickling lime 8 1/2 qts. water Õ Õ1 c. white vinegar 1 sm. bottle red coloring 1 tbsp. alum Enough water to cover cucumbers. Õ Simmer 2 hours and drain.

Õ2 c. white vinegar (6) 2 c. c. water (4) 10 c. sugar (20) 8 sticks cinnamon 1 lg. pkg. of red hots Õ Heat until red hots are dissolved. Then pour over cucumbers and let stand overnight. Drain and reheat for 3 days and on the third day leave cucumbers in syrup and bring to a boil. Pack in jars and seal.
